We are thrilled to have new chef Segar Kulasegarampillai join the Locus. Segar is the most experienced chef we have ever had. After migrating from Sri Lanka via Madras India in 1992 he graduated at the Stratford Chef School.
Ever since he has trained and worked with some of the best chefs in Canada including Michael Stadtlander. After a stint in New York’s Trendy Quince he spent six years as head chef at famed Toronto Restaurant Mildred Pierce. After owning and running restaurants in both Toronto and Vancouver Segar is now in charge of transforming our menu into something new and exciting.
His marrying of “spice route” spices from India, Thailand and Morocco to French classics transforms traditional dishes into something new. For example the Roasted Chicken Supreme on our new menu, it is in essence a roast chicken but the spices and scented basmati rice and fruit in the compote will remind you of a tagine.
Vegetarian and vegan fair gets the love and attention it needs at the Locus now with Segar in the kitchen. We will have a separate vegetarian menu for dinner and expanded vegetarian options for brunch and lunch as well. If you haven’t been to the Locus in a while you will be pleasantly surprised with the new dishes on offer. Come on by and check out what Segar has for you!
